To hold the roller stud from spinning when trying to remove the nut there is a slot on the end of the stud. You could try using a large flat head screwdriver to prevent the stud from rotating. If that doesn't work take a piece flat steel e.g. 1/8" thick 1-1/2" wide 8+" long. Cut a 11/16 slot into the end. Basically, this will ack as a thin wrench. Wedge this "wrench" between roller track and the roller. It will fit over the hexagon shoulder of the roller stud. This will prevent the stud from rotating while you remove the nut. You could also cut the nuts off if you have a torch and new nuts.
